Hannah’s and Tami’s Spatchcocked Turkey


Ingredients:

  • 16 pnd Turkey
  • 1 stick Butter, softened
  • 1 ½ T. fresh Thyme
  • 1 ½ T. fresh Sage
  • 2 T. fresh Rosemary
  • 1 T. Garlic powder
  • 1 T. Salt
  • 1 T. Pepper
  • 6 c. chicken broth in bottom of pan

Directions:

  1. Spatchcock the Turkey: Cut down both sides of the spine and remove. Turn over and push down on breast bones to spread turkey out flat and make sure that the breasts are completely exposed with skin.
  2. Mix butter and herbs/spices, then spread under breast skin and on top of ALL skin of the whole turkey.
  3. Bake on 450 degrees for 45 minutes, and then turn it down to 400 and bake for another hour.
  4. Remove turkey from oven at 160 and let it finish baking while it rests.

Tips:

Remove packages of giblets and such inside the Turkey’s cavity.
