Quinoa Salad


Ingredients:

  • 2 c. cooked Quinoa, prepared as directed on the package
  • 1 red pepper, diced
  • 1 c. sun-dried tomatoes, diced
  • 1 cucumber, diced
  • 2 15 oz cans chickpeas
  • ¼ purple onion, diced
  • ½ Tbl. dried basil leaves

Directions:

  1. Place all ingredients in a bowl.
  2. Mix with dressing.
  3. Top with crumbled Feta cheese.
  4. Serve and enjoy!

Tips:

  • Alternate Recipe: substitute Orzo pasta for quinoa.
