Ingredients:
- 2 c. cooked Quinoa, prepared as directed on the package
- 1 red pepper, diced
- 1 c. sun-dried tomatoes, diced
- 1 cucumber, diced
- 2 15 oz cans chickpeas
- ¼ purple onion, diced
- ½ Tbl. dried basil leaves
Directions:
- Place all ingredients in a bowl.
- Mix with dressing.
- Top with crumbled Feta cheese.
- Serve and enjoy!
Tips:
- Alternate Recipe: substitute Orzo pasta for quinoa.
