Pine Nut Pasta - Fettuccine with Smooshed Broccoli & Pine Nuts


Ingredients:

  • 1 pound Fettuccine Noodles, cooked
  • 6 cups Broccoli, cut up (can also use part cauliflower)
  • 3 tablespoons Olive Oil
  • 1 cup Chicken Broth
  • Salt and pepper, to taste
  • 1 cup Pine Nuts, toasted
  • Pecorino Cheese, shredded (no substitutes, this is the best)

Directions:

  1. Steam broccoli in olive oil and chicken broth until tender.
  2. Mash or blend the broccoli to desired-sized pieces.
  3. Add salt, pepper, and cooked fettuccine noodles to the broccoli mixture. Stir well.
  4. Serve topped with toasted pine nuts and shredded Pecorino cheese.

Tips:

  • Different, but delicious!
