Pine Nut Pasta - Fettuccine with Smooshed Broccoli & Pine Nuts
Ingredients:
1 pound Fettuccine Noodles, cooked
6 cups Broccoli, cut up (can also use part cauliflower)
3 tablespoons Olive Oil
1 cup Chicken Broth
Salt and pepper, to taste
1 cup Pine Nuts, toasted
Pecorino Cheese, shredded (no substitutes, this is the best)
Directions:
Steam broccoli in olive oil and chicken broth until tender.
Mash or blend the broccoli to desired-sized pieces.
Add salt, pepper, and cooked fettuccine noodles to the broccoli mixture. Stir well.
Serve topped with toasted pine nuts and shredded Pecorino cheese.
Tips:
Different, but delicious!
