Cake Ingredients:
- 1 c. oats, regular
- 1 ½ c. boiling water
- 1/3 c. brown sugar
- 1/3 c. white sugar (or use all brown sugar)
- 2 eggs
- ½ c. butter, softened
- 1 ½ c. flour (wheat flour can be used for half if desired)
- ½ tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
Cake Directions:
Pour boiling water over oats and let stand for 10 minutes. Then add brown sugar, white sugar, eggs, and softened butter.
Mix thoroughly. Combine dry ingredients (flour, salt, baking soda, cinnamon) and mix with the wet ingredients.
Bake at 350 degrees for approximately 40 minutes.
Topping Ingredients:
- ½ c. butter, melted
- 1/3 c. brown sugar
- ¼ c. heavy whipping cream
- 1 tsp. vanilla
- 1 c. nuts (pecans, walnuts, or almonds, or a mixture)
- 1 c. coconut
Topping Directions:
Mix all topping ingredients thoroughly. Spread on top of the cake and broil in the oven for 1 minute or until toasted.
(Tip: Make 1 ½ batches of the topping—it’s so good!)
