Olson Family Chicken Noodle Soup


Soup Ingredients:

  • 2 Tbl. Olive oil
  • 4-6 Carrots, sliced
  • 4 stalks celery, sliced
  • ½ onion, diced
  • 8 c. chicken broth
  • Salt and pepper to taste
  • Rotisserie chicken, or other, amount to own liking
  • Home-made noodles (see recipe below)

Soup Directions:

  1. Sauté carrots, celery, and onions in olive oil.
  2. Add broth, salt, and pepper. Cook until carrots are tender.
  3. Add noodles and cook until done.
  4. Add chicken and stir. Serve warm.

Home-made Noodles:

  • 2 1/3 c. flour
  • ½ tsp. salt
  • 3 eggs
  • ¼ c. water
  • 1 Tbl. oil

Directions for Noodles:

  1. Combine dry ingredients in a bowl.
  2. In a separate bowl, combine wet ingredients.
  3. Mix wet and dry ingredients together until well blended.
  4. Let dough rest for 30 minutes.
  5. Roll out dough to desired thickness.
  6. Cut dough into ½” x 1” strips.
  7. Cook in the soup and enjoy!
