Chicken Gnocchi Soup


Ingredients:

  • 2 Tbl. olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 carrots, diced
  • 4 stalks celery, diced
  • 2 Tbl. butter
  • ¼ c. flour
  • 1 Tbl. Italian seasoning
  • 1 tsp. paprika
  • 2 tsp. thyme, ground
  • 1 tsp. red pepper flakes
  • ½ tsp. salt and pepper, each
  • 4-6 c. chicken broth
  • ½ c. sun-dried tomatoes, cut up
  • 4-6 c. fresh spinach, cut up
  • 1 ½ c. cream
  • ½ c. parmesan cheese
  • 1 pound cooked Gnocchi, home-made or purchased
  • 1 pound Rotisserie Chicken, cut up

Directions:

  1. Sauté olive oil, onion, garlic, carrots, and celery until done.
  2. Stir in butter and flour.
  3. Add seasonings and chicken broth. Cook until carrots are tender.
  4. Add sun-dried tomatoes, spinach, cream, parmesan cheese, gnocchi, and chicken.
  5. Cook on medium heat until warmed through.
  6. Serve and enjoy!
