Ingredients:
- 2 Tbl. olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 6 carrots, diced
- 4 stalks celery, diced
- 2 Tbl. butter
- ¼ c. flour
- 1 Tbl. Italian seasoning
- 1 tsp. paprika
- 2 tsp. thyme, ground
- 1 tsp. red pepper flakes
- ½ tsp. salt and pepper, each
- 4-6 c. chicken broth
- ½ c. sun-dried tomatoes, cut up
- 4-6 c. fresh spinach, cut up
- 1 ½ c. cream
- ½ c. parmesan cheese
- 1 pound cooked Gnocchi, home-made or purchased
- 1 pound Rotisserie Chicken, cut up
Directions:
- Sauté olive oil, onion, garlic, carrots, and celery until done.
- Stir in butter and flour.
- Add seasonings and chicken broth. Cook until carrots are tender.
- Add sun-dried tomatoes, spinach, cream, parmesan cheese, gnocchi, and chicken.
- Cook on medium heat until warmed through.
- Serve and enjoy!
