Tami’s Chicken Enchilada Casserole


Ingredients:

  • 2 chicken breasts, fileted
  • 2 Tbl. chili powder
  • ¼ tsp. cumin
  • ½ tsp. salt
  • ½ tsp. pepper
  • 2 cups cooked rice
  • 1 can cream of chicken soup
  • ¼ c. sour cream
  • 2 c. cheddar cheese, shredded
  • Pickled jalapenos, chopped

Directions:

Combine chili powder, cumin, salt, and pepper and sprinkle on chicken. Bake at 400 degrees until chicken is cooked through. Shred the chicken and combine with the rice, cream of chicken soup, sour cream, cheese, and jalapenos. Spread into a baking dish, cover, and cook until heated through.

Tips:

Serve on a tortilla, on a leaf of lettuce, or by itself with a side of lettuce, tomatoes, and guacamole. Delish!
