Grandma Jackson’s Carrot Cookies


Ingredients:

  • 1 cup shortening (or half butter)
  • ¾ cup sugar
  • 2 eggs
  • 1 cup mashed cooked carrots
  • 2 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup coconut (optional, not added for Mother’s Day)

Directions:

  1. Combine shortening, sugar, eggs, and mashed cooked carrots in a mixing bowl.
  2. In a separate bowl, mix together flour, baking powder, and salt.
  3. Add the dry ingredients to the wet ingredients and mix until well combined.
  4. Drop spoonfuls of dough onto a greased or lined baking sheet.
  5. Bake at 400°F (200°C) for 8-10 minutes, or until the edges are lightly golden.
  6. Let the cookies cool completely before frosting with orange frosting.

Orange Frosting:

Ingredients:

  • 4 ½ cups powdered sugar
  • 1/3 cup soft butter
  • ¼ cup fresh orange juice
  • 1 teaspoon grated orange peel

Directions:

  1. In a bowl, combine powdered sugar, soft butter, fresh orange juice, and grated orange peel.
  2. Mix until smooth and creamy.
  3. Spread over the cooled carrot cookies.

  • Don't forget the cold glass of milk
