Grandma Jackson’s Carrot Cookies
Ingredients:
1 cup shortening (or half butter)
¾ cup sugar
2 eggs
1 cup mashed cooked carrots
2 cups flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup coconut (optional, not added for Mother’s Day)
Directions:
Combine shortening, sugar, eggs, and mashed cooked carrots in a mixing bowl.
In a separate bowl, mix together flour, baking powder, and salt.
Add the dry ingredients to the wet ingredients and mix until well combined.
Drop spoonfuls of dough onto a greased or lined baking sheet.
Bake at 400°F (200°C) for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool completely before frosting with orange frosting.
Orange Frosting:
Ingredients:
4 ½ cups powdered sugar
1/3 cup soft butter
¼ cup fresh orange juice
1 teaspoon grated orange peel
Directions:
In a bowl, combine powdered sugar, soft butter, fresh orange juice, and grated orange peel.
Mix until smooth and creamy.
Spread over the cooled carrot cookies.
